A new neighbourhood bakery in Brunswick, ITERA is dedicated gluten-free and specialises in naturally fermented bread, pastries and very good canelé. Come for a loaf, stay for something sweet, then leave with three pastries and a canelé for later too.

From morning teas and office meetings to birthdays and big get-togethers, we can prepare a larger spread of bread, pastries and canelé for pickup. Get in touch and we’ll let you know what we can prepare.
Settle in for an all gluten-free menu of seasonal plates, bakery favourites and a few things you probably weren’t expecting. You might find congee pot pie, a tiger prawn burger, corn and gruyère rarebit with Vegemite butter, or folded eggs with ’nduja and labneh, all alongside the breads coming out of the bakery.

Yes. Everything at ITERA is 100% gluten free and made in our dedicated gluten-free bakery.

We use a carefully developed mix of naturally gluten-free flours and starches, including rice, tapioca, potato, millet, buckwheat, teff, sorghum, quinoa and other specialty grains.

Not straight away. Our breads are baked fresh each morning and need time to cool and set properly. For the best texture, we recommend slicing once fully cooled, or even the following day.

Yes. We usually have a selection of vegan and dairy-free options available, although these can change daily. Check with the team in store for what’s available.

Not currently. While we settle into the new space, we’re focusing on our daily bakery offering. Custom cakes may be something we explore in the future.
